Parmigiano Reggiano is a traditional, unpasteurized, hard cheese made from cow's skimmed milk in the Emilia Reggio area of Italy. Sweet and fruity in aroma and pale yellow in color. Parmigiano Reggiano's flavor is piquant but not sharp like Romano. Basically, a grating cheese. This cheese is great as a topping for soups, pasta dishes, or salads. And it is also used as a table cheese. Sold in large, grainy chunks, cut from the large wheels stamped with the name on the rind.
